Instructions
- Combine the mayonnaise, sambal oelek, lime juice, rice vinegar, garlic powder, and erythritol in a small bowl, adjusting the sweetener to taste. Stir in most of the scallions, reserving some for garnish. Set aside.
- Pat the shrimp thoroughly dry with paper towels. Beat the egg in a shallow bowl. In a separate shallow bowl, combine the almond flour, Parmesan, salt, and black pepper.
- Dip each shrimp in the beaten egg, then lightly press it into the almond flour mixture until evenly coated. Place the coated shrimp on a plate and let rest for about 5 minutes to help the coating adhere and become crisp when cooked.
- Heat the coconut oil in a small saucepan over medium-high heat. Working in batches to avoid overcrowding, fry the shrimp for 2–3 minutes per side, until golden and cooked through.
- Lightly toss the shrimp with just enough bang bang sauce to coat, drizzle it over the top to keep the coating extra crisp, or serve the sauce on the side for dipping. Garnish with the reserved scallions and serve immediately with leafy greens or your choice of vegetables.
Can I make bang bang shrimp in the air fryer?
Absolutely. Lightly spray the coated shrimp with avocado oil and arrange them in a single layer in the air fryer basket. Air-fry at 360°F (180°C) for 4 minutes, then increase the temperature to 400°F (200°C) and cook for another 3–4 minutes, or until golden and cooked through. Work in batches if needed to avoid overcrowding.
What is the best oil for frying?
We recommend neutral coconut oil because its mild flavor works well with the shrimp and it is suitable for high-heat cooking. Avocado oil or ghee are also good options. We generally recommend avoiding highly refined seed oils such as soybean, corn, sunflower, and canola oil when possible. Using a small saucepan also allows you to fry the shrimp in a little more depth without needing a large amount of oil.
How do I keep bang bang shrimp crispy?
Make sure the shrimp are thoroughly dry before coating them and let the coating rest for about 5 minutes before cooking. For maximum crunch, drizzle the sauce over the shrimp or serve it on the side instead of completely coating them.
Can I adjust the heat?
Yes. Use less sambal for a milder sauce or add more if you like it spicy. Different brands vary in heat and sweetness, so adjust to taste.
What can I serve with bang bang shrimp?
Serve with a crunchy cabbage slaw, leafy green salad, cauliflower rice, or your favorite low-carb vegetables. Sugar-free pickled vegetables are also a great addition to balance the rich, spicy sauce.
Can I make the bang bang sauce ahead?
Yes. Make the sauce ahead and store it in an airtight container in the refrigerator for up to 3 days. Wait to add it to the shrimp until just before serving to keep the coating crisp.
How do I store and reheat leftovers?
Store the shrimp and sauce separately in the refrigerator for up to 2 days. For the best texture, reheat the shrimp in the air fryer or oven until hot and crisp, then add the sauce just before serving.
